Between Melbourne and Sydney, the Mt. Hotham area has a nice cross country skiing trail system, plus access to plenty of backcountry around Mt. Loch and Razorback. The main trail is Dinner Plain (11 km one-way) that runs from Mt. Hotham to Dinner Plain Resort. There are several side trails off this main route (5 km).
From the Hotham summit near the fire tower, there are great backcountry bowls worth exploring. Stay to the southwest to reach the road below near the Diamentina Shelter. For the adventurous, try the Razorback and the route up Mt. Feathertop (a long day of skiing).
To reach Hotham from Melbourne, follow the Hume Freeway towards Sydney. At the McDonalds restaurant, turn right. In Hotham near the ski bridge, there are many commercial lodges. Marouka Lodge is about 1 km further just past Big D on the right.
Overall, Mount Hotham is the 6th most popular cross country ski area of all 10 Nordic ski destinations in Australia.
